Why has Italy so much great variations of dishes?
The German students have discovered this is due to the "poor" and the "rich" cuisine.

 

The "rich" cuisine

The "rich" cuisine is the kitchen of the nobility and other rich people who like elaborate dishes. But you won`t find any dishes, which haven´t been changed and adapted to modern needs and tastes.

The "poor" cuisine

...was the kitchen of the poor people, who didn`t have much money and ingredients. Of course these dishes were very creative. What would you do, if you had just some flour and vegetabels? Make a tasty pizza! And people can be very inventive íf they are hungry.

The pizza

Today there exist innumerable variations of the
famous pizza. If you are brave enough you
can taste pizza with chocolate and peanuts, or
a pizza of 2 meters diameter.
Fact is, the pizza is loved by young and old
people alike. It`s a dish without limits, and it
tastes really very good.

History of the Pizza

The history of the most Italian dish goes back to ancient times, but the pizza as we know it today had its origins in Naples in the 18th century. In the 19th century even noblemen liked pizza so much that Ferdinand IV made his cooks use the ovens of Capodimonte, which were intended for artistic pottery. At first noblemen found it hard to satisfy their appetite for pizza. It was considered to be food for the ordinary people and so the noblemen
had to disguise in order to sneak into town to have a pizza, even keeping it secret from their wives!

The real breakthrough came in the year 1889 with
pizza baker Raffaele Esposito‘s new creation: Pizza Margherita

 

Pizza Margherita

Esposito ‘invented‘ three different types of pizza for
the visit of King Umberto I and Queen Margherita of
Savoy.
It was the pizza with the colours of the Italian flag,
which became the Queen‘s favourite and started the
success of pizza.
Pizza Margherita is topped with red tomatoes, white
mozzarella cheese and green basil.

In the rest of Italy nobody knew about pizza.
Pizza first made its way to the USA in the late 19th
century , where it became highly popular with the
Italian immigrants.
After pizza had become such a standard meal, US
Soldiers took it back to Italy after World War II, and
it again became famous there, too.

Pasta

Pasta is a bit similar to the pizza in that respect that there are many variations for the sauce, and the people love them.
However, there is a difference when we look at the history: The Italians think they invented pasta, and the Chinese people think so, too.

Way to Success

In many parts of the world the expression pasta is used as a general name for all types of ‘noodles’, and maccheroni is just one of the 350 different forms. In the South of Italy, however, people use maccheroni for all of them.

The best sauce is considered to be ‘rag’u’, with the main ingredients meat and tomatoes. You will surely be able to find some ‘original’ recipes from the region, so go into your kitchen and try to find your personal ‘best’.

Although the real inventor will remain unknown, Naples must get the credit for having helped to make noodles so successful. It was in this region that the industrial production started and was made (almost) perfect. The most important factories were set up in Gragnano Torre Annunziata and Torre del Greco.

Some people claim their home made pasta to be the best, but the natives of the Campagna region do not hesitate to trust industrial made pasta – as long as they are from this region.

To get a perfect pasta dish you need good quality noodles (from Campagna!), prepare them "al dente" (which is highly important and not as easy as it sounds) and a delicious sauce according to your taste.
